A new, expanded restaurant will open at the Seminole Hard Rock Hotel & Casino by year's end to rival much larger Hard Rock Cafes in other major cities.
Among the standout features, executives say, are blackjack tables in the middle of the restaurant with "Seminole Hard Rock Girls" as dealers, and a display kitchen with staff grinding meat into burgers.
A new, larger stage will have nightly shows and focus on country and rock music from the 70s, 80s, and 90s with classic rock bands who are coming back on tour.
"Bands like Styx, and others people know very well," said John Fontana, president of the Seminole Hard Rock Hotel and Casino.
The new 17,500-square-foot restaurant will take the place of Floyd's restaurant, and be nearly twice the size, with 350 seats, and work as a "beta test" site for new technology and features for other Hard Rock Cafes around the world.
The restaurant will have an elevated stage for regular performances, with a multi-media "canopy" arched over the two-story space, plus an open kitchen. A Rock Shop store will also sell items like clothing, gifts and pins.
While the casino allows smoking, the restaurant will not allow smoking during meal times, but then allow it during concerts and rock nights that will likely go until 3 a.m., Fontana said.
Employees of Floyd's, which closed 10 days ago, have been kept on the payroll for positions at the casino or the new café, the company said, with other workers hired at an autumn career fair.
The Seminole Tribe of Florida purchased the Hard Rock cafes, hotels and associated businesses in 2007.
