Here are two of Dave and Michele Russell's favorite vegetarian dishes that will be served at their meal today:
YUMMY SWEET POTATOES
3 cups mashed sweet potatoes
1 cup sugar
1/2 cup butter
2 eggs beaten
1 tablespoon vanilla
1/3 cup milk
Mix all ingredients above thoroughly. Put in casserole topping, using the following ingredients:
1 cup packaged brown sugar
1/3 cup flour
1/3 cup butter
1 cup chopped pecans
Mix topping ingredients with fork until crumbly. Sprinkle on top of casserole. Bake 20 minutes at 350-degrees.
VEGETARIAN LASAGNA
10 lasagna noodles in a 13 X 9 pan
2 ten-ounce package frozen spinach
1 tablespoon oil
1 cup grated carrots
2 cups sliced mushrooms
1/2 cup chopped ripe olives
1 1/2 teaspoon dried oregano
2 cups cream style cottage cheese
1 pound Monterey Jackcheese
15 ounces tomato sauce
6 ounces tomato paste
Cook noodles. Cook carrots and mushrooms until tender in 1 tablespoon oil. Stir in paste, sauce, olives and oregano. Simmer for 20 minutes. Spray lasagna pan with Pam.
Layer noodles, cottage cheese, tomato vegetable mixture and Jackcheese, ending with the Jackcheese.
Cook for 30 minutes at 375-degrees.
