A Veiled Threat
The supplements you take may help cancer hide, say researchers at Fred Hutchinson Cancer Research Center in Seattle. Calcium masks an early warning sign of prostate cancer.
In a study of 3,341 men, those taking a daily dose of 1,200 milligrams of the mineral — more than three servings' worth — experienced an 18 percent drop in PSA velocity, the rate at which this blood marker increases over time. As a result, the score couldn't be used to test for cancer.
Furthermore, previous research shows that high doses of supplemental calcium may increase the risk of prostate cancer. Why? A large influx of calcium lowers your levels of vitamin D, which is tied in to the health of your prostate.
The fix? Consume your calcium in small servings.
Watch Out For This Trans Fat
Avoiding trans fats? Good for you — but beware the new artery archenemy: interesterified oil, now cropping up on more ingredient lists as a trans-fat substitute in processed foods.
This is a modified oil that may raise blood sugar by 20 percent, a potential precursor to diabetes, say Brandeis University scientists.
And unlike trans fats, it also cuts levels of heart-healthy HDL cholesterol. Look for trans-free foods prepared with corn, canola, sunflower or safflower oil.
Happy Hour Hiatus
Indulged in some serious partying? Don't beat yourself up.
A study in the American Journal of Epidemiology found that taking a break from alcohol a few days a week may neutralize the negative effects of heavy drinking. Researchers in Japan analyzed data from 89,000 people and discovered that men who downed the equivalent of 20 glasses of wine a week had a much lower risk of death if they confined their drinking to four days a week, tops.
Researchers speculate that daily exposure to acetaldehyde, a chemical byproduct of alcohol, promotes cancer.
Want to stay on the safe side? Stick to the National Institute on Alcohol Abuse and Alcoholism's recommendation of no more than one drink per day.

Breakfast Panini
4 thin slices whole-wheat bread
4 slices reduced-fat Jarlsberg cheese
1 medium Granny Smith apple, cored and thinly sliced
2 slices deli-style ham
1 teaspoon salted butter, softened
Layer each of 2 bread slices with 1 cheese slice, 1/2 of the apple slices, 1 ham slice and 1 more cheese slice. Top each sandwich with remaining bread slices and spread with thin layer of butter.
Heat grill pan over medium-low heat. Put sandwiches in pan, buttered side down, and place heavy skillet on top of sandwiches to weigh them down. Cook until golden brown and crisp on bottom, about 1 minute. Remove skillet from heat and spread remaining butter on top of sandwiches. Flip sandwiches, weigh down with skillet and cook until browned and crisp, 1 to 2 minutes more. Serves 2.
Per serving: 298 calories, 11 grams fat, 42 milligrams cholesterol, 806 milligrams sodium, 34 grams carbs, 6 grams fiber, 21 grams protein
