WASHINGTON - How safe is that salad?
Every year, 1 in 4 Americans suffers from food illness, and about 14 percent of those cases involve fresh produce.
Already allowed to reduce bacteria in some meats and spices, radiation is being permitted today by the Food and Drug Administration for lettuce and spinach.
Irradiation involves bombarding food with high-energy gamma or electron beams to disrupt the DNA of pathogens. While it won't replace safeguards against E. coli and salmonella in the growing fields and processing plants, food zapping is intended to be another preventative step.
Food safety advocates argue it makes food less nutritious and potentially toxic.
