PAUPER'S PIE

Oatmeal pie recipes continue to fill our mailbox. Readers sent lots of versions in hopes of helping Susan Tamme of Palm Harbor with a request she made a few weeks back.

Carol Bixler e-mailed: "I'm a snowbird from Ohio wintering in Clearwater. When I was in college, and later, I made this 'poor man's pecan pie' many times. It's quick, easy, delicious and inexpensive." Carolyn Henderson of Dade City, Harriet Colton of Sun City Center, Mae B. McPherson of Tampa, Sandee Prickett of Zephyrhills and Bonnie Sides of Plant City all sent their favorite versions.

"This is a recipe that my mother passed on to me," Donna Buddemeyer wrote. "It tastes just like pecan pie and is so good." Her recipe is below.

HE LOVES THAT CHICKEN

"I'm looking for a recipe that duplicates the coating on Popeye's chicken," Skip Erickson wrote. "I have tried everything to get the three-dimensional crispy coating, but failed at every turn. Any ideas?"

MOLD REQUEST

June Seaton of Tampa can't say she didn't warn me.

"This request is going to have weird items in it," she wrote.

OK. Hit me, June.

"It was a mold you ate with crackers like a spread," she says. "It had tuna, black olives and cream cheese.

"I worked years ago for a title company in Town 'N Country, and an employee by the name of Jan made it. I have never been able to find the recipe. To be honest, I have been wanting for years to request it, but I figured people would think I was crazy. Whenever I ask anyone if they have ever had it, they look at me like I'm crazy with these ingredients. It was sooooo good."

No reason to be sheepish, June. We try not to judge the recipes around these parts.
OATMEAL PIE
2/3 cups raw oats

3 eggs well beaten

2/3 cups white sugar

1 cup brown sugar
2 tablespoons butter

2/3 cup coconut
1 teaspoon vanilla
1 unbaked pie shell
Mix all ingredients together. Pour in pie shell.

Bake at 375 degrees for 40 minutes.
