"Wings," by Debbie Moose (Wiley, $16.95)

With New Year's bowl games and the Super Bowl approaching, we're nearing the high holy days of chicken wing consumption. This book is a tasty guide for the novices who are inexperienced at cooking them as well as the pro who might be looking for new recipes/rubs/cooking techniques. The Indian-flavored vindaloo wings got our taste buds' attention, as did the recipe for Bloody Mary Chicks.

"Classical Southern Cooking," by Damon Lee Fowler (Gibbs Smith, $30)

Much of Southern cooking has been perverted by the recent idea that one need only add butter, cream or bacon to a dish to qualify it as such. Fowler's wonderful book, recently revised, takes a scholarly look at the template for the region's cuisine - tracing its French, Spanish, English and African roots - while still keeping an eye on its luxurious, decadent offerings. The stewed okra recipe alone makes this worth a purchase.

"The New Mediterranean Diet Cookbook," by Nancy Harmon Jenkins (Bantam, $40)

In 1994, "The Mediterranean Diet Cookbook" hit the bestseller list when healthful properties of eating olive oil, fresh fruit, nuts and fish became all the rage. Since much has changed in those almost 15 years ("Cook your meal in under 29 minutes, GO!"), the book has been updated with more than 90 recipes that have been simplified and with additional information on nutritional studies that support the diet's healthful attributes.
