Some of the most important ingredients to stock in your pantry are canned beans and legumes. They're quick to prepare and can be made into myriad dishes including salads, soups and entrees. Each bean variety has its own flavor, texture and appearance.
In many countries, beans are a major source of protein.
In Spain, you can sample olla prodrida, or chickpea soup, an ancient Jewish recipe. Then there's hummus, a Middle Eastern and Israeli staple. Refried beans are popular in Mexico, and Cubans like silky black bean soup. Clearly, the bean is at home on every continent. It has nourished peasants while keeping a place on plates in the most upscale recipes.
Although cooking dried beans produces the best flavor, canned beans are tasty and have good texture. Keep a full assortment in your pantry for planned and spontaneous dinners.
