Be a kid again - lick your fingers and refuse to share this diva-licious version of sloppy Joes, the spicy, sweet goo spilling out of buttery toasted Cuban bread. Or pile the sauced meat on an old-fashioned white bun for sloppy-joy time travel back to school days of lunchroom ladies and plastic trays.
To curb calories, the fickle divas ditched sloppy Joe for sloppy Tom. This leaner version of the retro classic uses ground turkey instead of beef. (It was love at first bite.) Jalapeno gives a subtle jump-start to the savory flavors, and the molasses mellows it all with a dark sweetness.
Forget that stuff in a can; this from-scratch style takes less than 30 minutes.
SLOPPY TOMS
1 pound ground turkey
1 medium onion, diced
1 jalapeno, minced (seeds and ribs removed)
1 cup tomato sauce
2 tablespoons tomato paste
1 tablespoon red wine vinegar
1 tablespoon molasses
1 tablespoon Worcestershire sauce
1 teaspoon yellow mustard
1 teaspoon ground cumin
Salt, freshly ground black pepper, to taste
Cuban bread or hamburger buns
Butter for toasting the bread
In a large nonstick skillet over medium-high heat, brown the turkey and onion.
Add the jalapeno and cook 5 minutes more, stirring.
Add the tomato sauce, tomato paste, vinegar, molasses, Worcestershire sauce, mustard and cumin. Season with salt and pepper. Reduce heat to low, and simmer for 10 minutes.
Toast bread with butter, and make sandwich with turkey mixture.
