Who would have thought that canned vegetable juice would turn into what is today a $1 billion brand?
V-8 was created by W.G. Peacock, founder of the New England Product Co. Peacock first marketed individual vegetable juices under the name Vege-min, according to a V-8 news release. Consumers didn't go for the taste, so he tried blending the juices.
V-8, which is 75 years old this year, is made of the same eight vegetables now as it was then: tomato, carrot, celery, beet, parsley, lettuce, watercress and spinach juices. In 2007, the sodium content was reduced 19 percent.
Eating heart-healthy snacks during the Super Bowl isn't a bad idea. Here are a few suggestions:
•Bruschetta, or toasted slices of French bread with toppings, is one of the best options. Serve a basket with bread slices and several toppings. These can include chopped, vine-ripe tomatoes with fresh basil, garlic and olive oil; roasted, pureed eggplant with olive oil, garlic and lemon; hummus; or a tapenade of olives and anchovies.
•Fresh fruit plate with cheese. Surround the cheese with slices of Asian pear, mango, pineapple, kiwi, tart green apple and red raspberries.
•Hot soup or chili in mugs. These are low in fat and hearty.
