University of Florida researchers received a $4 million federal contract to improve how the military distributes food to troops.
Scientists with UF's Center for Food Distribution and Retailing won the contract to more efficiently distribute military rations at lower cost.
The contract is the largest the university's food distribution center has received in the past decade, said Jimmy Cheek, UF's senior vice president for agriculture and natural resources.
UF researchers say that military food is shipped from the United States in a complex supply chain. Environmental conditions during transport and storage can reduce the nutritional value of food, said Jeffrey Brecht, the director of the university's food distribution center.
