Oils high in omega 3-rich polyunsaturated fat such as walnut oil, flaxseed oil and canola oil are a good addition to the diet because studies show they reduce the risk of stroke, heart attack and heart disease.
Here are six healthy oil strategies from the authors of "The Flexitarian Diet" (McGraw-Hill, $24.95) and "The New American Plate Cookbook" (University of California Press, $25.95):
1. Grapeseed oil. Makes a flavorful salad dressing.
2. Peanut oil. Another heart-healthy monounsaturated fat.
3. Toasted sesame oil. A small amount packs a lot of flavor.
4. Flaxseed oil. Aids circulation to reduce risk of stroke or blood clots; also acts as an anti-inflammatory agent.
5. Canola oil. A monounsaturated fat with small amounts of omega 3 fats.
6. Extra-virgin olive oil. Provides flavor and heart-healthy monounsaturated fat.
