PLANT CITY - Judging barbecue – at least professionally - requires more than an appetite.
There are such factors to consider as tenderness and appearance. And that takes a bit of schooling.
That's where the Greater Plant City Chamber of Commerce can help.
The chamber is holding its annual class Oct. 3 on the fine art of judging barbecue. The Kansas City Barbeque Society-sanctioned class helps ensure Plant City's Pig Jam will have enough judges to pick the tastiest ribs, chicken and brisket.
The school is from 5 to 8:30 p.m. at Walden Lake Golf and Country Club, 2001 Clubhouse Drive, Plant City.
The class is limited to the first 36 students to sign up, chamber of commerce President Marion Smith said. The cost is $65 for Kansas City BBQ Society members, $100 for others. The nonmember fee includes a one-year membership in the society. The payment must be received with the application.
Students certified by the Kansas City society become eligible to serve as judges at the many barbecue events that the organization sanctions annually. The chamber uses students from the school as judges in the Pig Jam, although there's no guarantee that you will be selected for the duty.

This year's Pig Jam will be from 10 a.m. to 5 p.m. Nov. 20 at the Randy L. Larson Softball Four-Plex at 1500 S. Park Road, near Plant City Stadium.
